Peach Crisp

I have been using up a lot of my Georgia Peach Truck peaches in my breakfast overnight oats, on top of my salads, and freezing more for later.  I wanted to try a different recipe with these most delicious, juicy pieces of fruit.  In the fall, I tried an apple crisp recipe and really enjoyed it.  I thought it was worth a shot to change the fruit and make it a peach crisp instead.  I am very glad I made the switch, because it is just as scrumptious.


Ingredients:

  • four fresh peaches, peeled and sliced
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla
  • 1/2 cup old-fashioned oats
  • 2 tablespoons butter, melted

Instructions:

1. Preheat oven to 375 degrees.

2. In a bowl, mix together the brown sugar, cinnamon, oats, butter, and vanilla.


3.  Peel and slice the peaches.


4.  Spread the peaches evenly  in a 9-inch baking dish.


5.  Pour the oats mixture over the peaches, spreading evenly.


6.  Bake in the oven for 30 minutes.

7.  Gently stir to evenly coat the peaches in the melted topping at the bottom of the dish.

8. Serve warm (bonus if you serve it with ice cream).

This makes four on-point servings.  If you are baking for a larger family or group, definitely double or triple the recipe.

I enjoyed the first serving first thing out of the oven.  I stored the rest in an air-tight dish inside the refrigerator.  The peach crisp will be good for 3-4 days in the refrigerator.  Good luck making it last that long once your family has a bite of it.  Warm leftovers in the microwave for 20 seconds before serving.
