Energy Balls

Ingredients:

1.5 cups old-fashioned oats

1/2 cup mini chocolate chips (I use semi-sweet)

1/2 cup unsweetened coconut flakes

1/2 cup natural creamy peanut butter

1/3 cup honey

Instructions:

  1. In a bowl, mix together oats, chocolate chips, and coconut flakes.
  2. Fold in peanut butter and honey.
  3. Mix until all oats are sticking together.
  4. Run water over your hands.
  5. Use your hands to roll golf-ball sized balls.
  6. Repeat step four as many times as needed (usually after 4-5 balls).
  7. Place in air-tight container.
  8. Store in refrigerator.

I double the recipe and it makes around 30 energy balls.
