Energy Balls
Energy Balls
Ingredients:
1.5 cups old-fashioned oats
1/2 cup mini chocolate chips (I use semi-sweet)
1/2 cup unsweetened coconut flakes
1/2 cup natural creamy peanut butter
1/3 cup honey
Instructions:
- In a bowl, mix together oats, chocolate chips, and coconut flakes.
- Fold in peanut butter and honey.
- Mix until all oats are sticking together.
- Run water over your hands.
- Use your hands to roll golf-ball sized balls.
- Repeat step four as many times as needed (usually after 4-5 balls).
- Place in air-tight container.
- Store in refrigerator.
I double the recipe and it makes around 30 energy balls.
Enjoy!

I am very thankful to be able to say that I “raced” each of my distances last year. Those four distances…
