Peach Overnight Oats

I love me some overnight oats for breakfast!  Make the night before, enjoy for breakfast, and stay fueled throughout the morning.  This recipe will make enough for two jars.  Two breakfasts in one!

Ingredients:

  • 1 large ripe banana sliced
  • 1 cup almond milk
  • 3/4 cup old-fashioned oats
  • 1/2 tablespoon honey
  • 1/4 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1 1/2 cup chunks of peaches (Fresh peaches are my favorite, but frozen peaches work, too)
  • 1 tablespoon of chocolate-chips (Optional)

Instructions:

1. Blend banana, milk, honey, cinnamon, vanilla, and 1 cup of peach chunks together.

2. Stir in old-fashioned oats with a spoon.

3. In two jars, divide the chocolate chips at the bottom for a special treat at the end of breakfast. (Optional)

4. Divide the blended mixture between the two jars.  Go back and forth pouring a little at a time until the blender is empty.

5.  Divide and place the remainder of the peaches over the oats in each jar.

6.  Sprinkle on a little bit more honey over the top of the peaches. (Optional)

7. Place in refrigerator overnight. The extra jar will stay good for 3-4 days.
