Pancakes

Two ingredient pancakes?  What?!?!?  How does that even work?  Will it taste good?  Hmmm.  I will have to try it someday…

Today was the day!

I have seen these pancakes posted a few different times.  I am always intrigued when I see the pictures and read that they are made up of only bananas and eggs.  No flour? No sugar? Nothing else?  Between not making a special Titanic cake last week as I planned (lots of egg whites), therefore having a ton of eggs in the refrigerator, and the eggs expiring this coming weekend, it was time to give this recipe a go!

I was pleasantly surprised with the taste of these pancakes.  I will say, you have to enjoy a banana flavor if you are going to like these.  Honestly, I was not expecting much.  However, I ended up enjoy my dinner and plan to make these again.  I crossed my fingers that the boys would like these, too.  I added chocolate chips into C’s pancakes in hopes of getting him to convert.  No such luck.  He is more of a waffle guy than pancake guy to begin with.  On the other hand, N ate most of his.  I will not lie.  Usually on pancake night, N asks for seconds.  Tonight, he did not.  We will see how it goes next time around.

Ingredients:

  • 3 bananas
  • 6 eggs
  • 1/2 tsp vanilla extract
  • optional – mini chocolate chips

If you want to make these for one person, you can easily do one banana and two eggs.  The three bananas and six eggs made approximately 12 silver dollar sized pancakes.  The pancakes are pretty thin.  Normally, I eat two medium sized pancakes when I make pancake dinner.  Tonight, I had four of these smaller sized pancakes.

Instructions:

1.  Mash bananas and vanilla extract together.


I used my KitchenAid blender to mix the two ingredients together.


2. Stir in eggs.

I used the stir setting on my blender.


3. Use your choice of non-stick material to grease your skillet.  Use medium heat.

4. Pour batter carefully to keep the pancake smaller.

My first attempt, I poured the batter too quickly.  The pancakes were larger, normal sized pancakes.  When it came time to flip them, this was the outcome…


Attempt number two was a little better.  I managed to only break the pancake in half, but got it flipped over.


Finally, round three was successful!

Tip: Use a larger pancake flipper to be able to get under most of the pancake.  Or use the larger pancake flipper underneath and a second spatula to help flip at the edge of the skillet.

5.  Cook pancake on each side for only a minute (maybe even less depending on your stove top).


My pouring size improved after each round.  Keeping the pancakes at this silver-dollar size makes it easier to flip and serve without them breaking apart.


6.  Serve warm with your choice of toppings.

N: strawberry yogurt to dip the pancakes into

C: with chocolate chips and a side of the strawberry yogurt for dipping

Me: a side of Greek vanilla yogurt, strawberries, cranberries, and blueberries


I stacked my four pancakes on top of each other and ate them like a normal pancake.
