Avocado-Lime Mason Jar Salad

I have had my spiralizer for a couple months now.  I kept wanting to try all kinds of different recipes, but I had yet to go for it.  My in-laws gave me a new cookbook for Easter.  It is Inspiralized: Turn Vegetables into Healthy, Creative, Satisfying Meals by Ali Maffucci.  That was my sign to get the OXO spiralizer out of the box and try a recipe!

This recipe is easy, even with making your own dressing.  It can be prepped and made in about 30 minutes.  I like quick and easy!

Ingredients:

  • 4 T olive oil
  • 8 ounces boneless chicken
  • 1 cup corn
  • 2-3 T chopped fresh cilantro
  • 1 garlic clove, minced
  • 2 T lime juice
  • 1 avocado, cubed
  • 1 large red pepper
  • 2 zucchini, spiralized spaghetti size
  • black pepper

Instructions:

1. Cut chicken breast into 1/2 inch cubes.

2. Heat 1 T olive oil in a nonstick skillet over medium heat.

3. Cook chicken in olive oil and pepper until lightly browned on the outsides, approximately 6-8 minutes.

4.  Cook corn.  The recipe says to use an ear of corn, cut it off, cook it on the stove, etc.  I used frozen corn and cooked it in the microwave!  Easy peasy!


5.  Make the dressing.


In a food processor (or my blender), add in cilantro, garlic clove, 3 T olive oil, lime juice, and avocado.  Use the pulse mode to mix the ingredients until creamy. One tablespoon at a time, add in water until the dressing is the consistency you want.  Pulse after each water addition.  Set aside.


6.  Spiralize zucchini.


Two zucchinis make a lot of noodles!


7.  Dice red pepper.


8.  Layer salad into mason jars.  Put the dressing on the bottom, and add a serving of chicken.  Next, layer in the peppers, corn, and zucchini noodles.  If you are an olive person (I am not), you may add a layer of those, too.  Refrigerate for 1-2 days or enjoy right away!

Two servings went to the refrigerator for lunches and I ate another serving right away.  Since I was having one serving immediately, I just plated the salad in reverse… zucchini noodles on the bottom, corn, peppers, chicken, and the dressing on the side (always on the side if possible).  I probably could have made a fourth serving with the amount of noodles, corn and dressing that was left, but I would have needed more red peppers and chicken, in my opinion.


This salad is perfect for a warm, summertime day.  It is light, yet satisfying.

It was a delicious meal to enjoy before an evening walk up to the neighborhood pond with my boys.  The ducks, fish, and turtles needed to be fed their dinner, too!
